say cheese.... burger

What's with men and grilling?  Or men's craving for burgers?

My husband's request for Father's day is burgers.  So burgers it will be.  But when my husband heard the patty start to sizzle, he said: "call me when the patties are about to be cooked, I'll show you a technique that I watched in Guy Fieri's show"

My eyebrows raised.  I'm intrigued what technique he's going to show me.  So I got my camera ready and started to take pictures as he was about to do "his technique"

He first laid cheese on each patty...



 and added a little more just like so...


Then surprise surprise... he adds some ice chips into the pan...


and covers the pan instantly...


The steam causes the cheese to melt...


 ...and the result?  Hmmmm so good.  This is a very cheesy burger.  In fact if you add more cheese, it will create a skirt around the burger, which you can add to the bun.  To tell you honestly, I had to make another burger for my photo shoot (that's why you'll notice the difference in the color of the cheese... for my photo shoot I used white American cheese) because the burgers disappeared from the table quickly.


Then we layered the burger with tomatoes, romaine lettuce, caramelized onions, ketchup and jalapeno mustard.

Now if you'll excuse me, I have yet to finish the burger while it's hot... I hope you had a great Father's day too!

    1. It was father's day so I let him hahah, NO P he does, especially on weekends breakfast and grilling are his specialties.

  2. That's a gender distinction between a man and a woman in the kitchen LOL! I love this technique shared by your husband. I think again it's the scientist in him. This technique involves science no doubt. He should know he is the scientist.

  4. sorry but I browse the pics first, and thought why so much of oil, but then again I read the whole post and found there is trick to melt the cheese. Really impressive... !!! I am going to try this soon.

    1. That's not oil but the skirt of cheese that melted. You could scoop that out and spread it into your bun and it's mmmm good!

  5. Interesting technique! I melt cheese like that on burgers all the time on the grill, but have never tried it in the pan for some reason. That cheese "skirt" certainly looks intriguing! Good post - thanks.

  9. Oh, you are making me crave for those cheese burgers, Malou!
    The sizzle and that steam coming from underneath the lid is driving me crazy!

    I also like to make my burger in the cast iron skillet like yours...better yet, I have a square shape cast iron grill pan...love it!
    Now, you've given me an idea what to make for a quick dinner, and yes, coleslaw to go with it...your burgers look and taste so yumm, and juicy:DDD

  11. Oh I saw that ice cube thing on the show and it looked so interesting. Glad to know it works fantastically, I can definitely understand all of the burgers quickly disappearing!

  12. Mmm, the cheese skirt is the BEST thing to eat off of the burgers! What's also good is going double cheese by stuffing the burger with cheese (I like to use a mixture of blue/cream cheese) and then finish off with the cheese skirt ;)
